1 1/2 Cup rolled oats (old fashioned or quick)
2 Cups buttermilk
2 Eggs, beaten
2 Tbs. Oil
3/4 Cup flour
1 tsp. Sugar
1 tsp. Baking soda
1 tsp. Baking powder
dash of salt
Combine oats and buttermilk. Let stand about 5 min.
Beat in eggs and oil.
Combine dry ingredients and mix in just until combined.
*I like to thin batter with about 1/2 skim milk.
Cook thoroughly in waffle iron or fry on hot griddle.
