2 Qts. Water
1 C. Kosher Salt
1 C. Brown Sugar
2 Tbs. Lemon Juice
3/4 tsp. Pepper
4 Cloves Garlic
Disolve salt in cold water. Add the rest.
Brine time: Coho...3 hours
King...3 1/2 hours
After brining, rinse, then air dry 1 to 2 hours.
Smoke: 2 pans alderwood chips only.
Begin checking for doneness after 4 hours.
